SLOW COOKER LENTIL, VEGGIE AND FREEKEH STEW

Cooking time: 2 hours

Ingredients:

1/2 cup green french lentils

1/2 cup freekeh

1 potato

1 carrot

150g pumpkin

1/2 onion

2 garlic cloves

2 bay leaves

1 can diced tomatoes (400g)

4 cups bone broth or stock

Pepper & salt to taste

1 tbsp olive oil

  1. Chop all your veggies into small equal sized chunks and set aside.

  2. Finely chop the onion & garlic & set those aside too.

  3. Rinse the lentils & freekeh under running water.

  4. Turn on your slow cooker and place everything in, cooking on high for 2 hours.

  5. Once finished, season with salt and pepper to your liking.
